Here’s a recipe originally submitted by our Facebook fan Laurie Lufkin during Sunrich Naturals’ Embrace The Sun Recipe Contest from earlier this summer. As Laurie says, it’s “easy, nutritious and healthy” and it’s perfectly suited for these late summer-early fall mornings.
Strawberry Sunshine Swirl Breakfast Quinoa
- ¾ cup pre-washed quinoa
- 2 cups refreshing SoL Sunflower Beverage, Original Flavor
- ¼ teaspoon salt
- 1/2 teaspoon vanilla extract or vanilla bean paste
- 1 tablespoon agave nectar or honey
- 2 tablespoons strawberry all fruit spread
- 2 strawberries, sliced and fanned for garnish
Add quinoa, 1 ½ cups Sol Sunflower Beverage and salt to a medium saucepan, and stir to combine. Bring to a vigorous boil over medium heat, stirring occasionally, and reduce heat to low and simmer, covered, until quinoa is tender and white spiral threads appear around each grain, about 15 minutes. Remove from heat and stir in vanilla bean paste and agave nectar.
Divide cooked quinoa between two serving bowls. Swirl all fruit spread on top of quinoa. Pour remaining ½ cup Sol Sunflower beverage equally over cooked quinoa and garnish with sliced strawberry.
Serve immediately. Makes 2 servings.
