Recipe: Tomato Basil Soup

Talk about flavor! This classic summertime tomato soup recipe is made with low-fat SoL Sunflower Beverage, keeping it healthy and tasty. You’ll definitely enjoy this one.


  • 1 medium sweet onion, diced
  • 6 cloves of garlic, mince
  • 1/4 cup of olive oil
  • 2 cans of 28 ounce diced tomatoes
  • 1 cup of chicken broth, can use vegetable
  • 1/2 cup of basil, roughly chopped
  • 1 teaspoon of salt

Prep Time: 5 minutes

Cook Time: 30 minutes

Total Time: 35 minutes

Servings: 6 – 8 


Dice a medium onion and mince 6 cloves of garlic.  Heat olive oil in a large saucepan over medium heat.  When the oil is warmed, add the onions and garlic and sauté until the onions are translucent and the garlic is fragrant – about 5 minutes will do. 

Add the canned tomatoes, chicken broth, and salt and bring to a boil.  Reduce heat to simmer and stir occasionally for 20 minutes.  Turn off heat.

Add the roughly chopped basil and SoL to the soup.  Using an immersion blender, or a countertop blender (working in batches as necessary), puree the mixture to a smooth consistency.  Please be careful while mixing to not burn yourself.  Return the soup to the heat and bring to temperature, serve immediately.
