Recipe: Lemon Meringue Pie

Of course it would be easy to enjoy a slice of homemade pie every day, but even better when there is an actual holiday for it! August 15th is National Lemon Meringue Pie Day.  You can enjoy this tasty dessert guilt-free by replacing some of the sweetened condensed milk with SoL Sunflower Beverage.  Now you can have your pie, and eat it too!


8 oz sweetened condensed milk

6 oz SoL Vanilla Sunflower Beverage

1/2 cup lemon juice

1 tsp lemon zest, grated

3 eggs, separate yolks from whites

8-in. premade pie crust shell

1/4 tsp cream of tartar

1/4 cup sugar


1. Preheat oven to 325o F.

2. Stir condensed milk, SoL, lemon juice & zest together in mixing bowl.  Blend in the egg yolks as you stir.  Once everything is combined, pour mixture into pie crust.

3.  Beat cream of tartar and egg whites together until peaks begin to form.  Slowly blend in sugar until mixture hardens.  Spread the mixture over filling in the pie crust.

4. Bake pie for 12-15 minutes in oven, or until meringue turns a golden-brown color.
