These are great to have on hand for a healthy, on-the-go snack! It’s hard to find energy bars without preservatives and allergens at the store—but this recipe solves that problem. Free of gluten and dairy and made with our nutritious SoL Beverage, these are perfectly healthy energy bars. Of course, they’re also delicious!
2 cups crispy brown rice cereal
2 Tbsp ground flaxseeds
2 Tbsp vanilla protein powder (rice- or soy-based)
1/2 tsp baking powder
1/4 cup sun butter or soy nut butter
1/8 tsp salt
1 tsp cinnamon
2 Tbsp raisins
1/4 cup shredded coconut
6 dates or figs, pitted
1/2 cup SoL Sunflower Beverage (Original or Vanilla)
2 Tbsp sugar
Yields 20 bars
1.) Preheat oven to 350O F. Spray two baking sheets with non-stick cooking spray.
2.) In a food processor, blend 1 ½ cups cereal, flaxseeds, protein powder, baking powder, cinnamon, and salt until they are ground into a powder.
3.) Combine powder mixture (from step 2), coconut, raisins, and other 1/2 cup of cereal in a bowl.
4.) Blend sun (or soy nut) butter, dates, SoL Sunflower Beverage, and sugar in food processor. Add this mixture to other ingredients in the bowl and combine until you have a soft, dough-like consistency.
5.) Scoop mixture in 1-Tbsp proportions onto baking sheets, flattening each scoop slightly.
6.) Bake for 16-20 minutes in oven—rotate baking sheets halfway through baking.
*Cookie bars may be frozen once they are baked.
