Recipe: Lighter Lasagna

Every year, we all seem to want something warm and heavy for dinner as the days get shorter and the nights get colder. This recipe lets you enjoy the taste of comfort food, while still being healthy and good for your body. Using turkey sausage instead of pork lightens up this winter favorite and adding SoL makes for a creamier dish, yet it’s still lighter than most recipes!


>1/2  lb turkey sausage
1/8 cup SoL Unsweetened Sunflower Beverage
1/2  lb lean ground turkey
6 lasagna noodles
8oz ricotta cheese
3oz low-fat mozzarella cheese, sliced
3oz parmesan cheese, grated
1/2  tsp Italian seasoning
1/4  cup onion, diced
1/2 tsp black pepper
1 clove garlic, minced
1 Tbsp fresh parsley, chopped
14oz crushed tomatoes
6oz tomato paste
6.5oz tomato sauce
1/8 cup water
3/4  tsp basil leaves, dried
1/4  tsp fennel seeds

*Yields 4-6 Servings


1.) Cook and occasionally stir turkey sausage, garlic, and onion in a large skillet over medium heat, for about 15 minutes or until browned. Stir in water, SoL Unsweetened Sunflower Beverage, tomato paste, tomato sauce, and crushed tomatoes. Season with fennel seeds, basil, parsley, Italian seasoning and pepper.  Let the mixture simmer for about one hour and 30 minutes, stirring occasionally.  Do not cover.

2.) Preheat oven to 375oF.  Bring a big pot of water (lightly salted) to a boil.  Cook lasagna noodles in the boiling water, stirring occasionally.  Cook noodles for about 8 minutes or until they are cooked thoroughly, but still firm.

3.) Pour 3/4  cup turkey sauce mixture in bottom of a 4×6 baking pan and spread evenly.  Place 3 noodles lengthwise over the mixture.  Spread 4oz ricotta cheese over the noodles. Arrange a third of the mozzarella slices over the ricotta. Spread 3/4  cup turkey sauce over mozzarella, and top with   1oz parmesan cheese.  Repeat layers, and top with leftover mozzarella and parmesan cheese.  Cover dish with aluminum foil (make sure foil is not touching the cheese).

4.) Bake in oven for 25 minutes, or until cheese is melted and sauce is hot.  Remove foil and bake for another 25 minutes, or until cheese turns a golden-brown color.  Lasagna will be hot! Let sit for 10-15 minutes before serving. Enjoy!
