Recipe: Soft-Baked Oatmeal Cookies

These are sure to be a crowd-pleaser—the soft, chewy texture paired with the sweet taste of oatmeal is sure to be a hit with everyone. They’re so delicious, no one will know they were made with raw sugar, whole-wheat flour and dates! These pair GREAT with a glass of SoL.

 

 

 

Ingredients:
3/4 cup butter, softened
1/4 cup SoL Original Sunflower Beverage
1 ¼ cups raw sugar
2 eggs
1 tsp vanilla extract
2 cups whole-wheat flour (or gluten-free flour)
1 tsp baking soda
1 tsp salt
2 tsp ground cinnamon
1 cup dates, pitted and diced
3 cups rolled oats
*Yields 2 dozen cookies

Directions:
1.) Blend butter, SoL, and sugar in a large bowl with an electric mixer until smooth. Add one egg to the mixture, and add the other egg after the first has smoothly blended into the mixture. Add in vanilla extract.

2.) In a separate bowl, combine flour, baking soda, cinnamon, and salt. Once dry ingredients are combined, blend in the butter mixture. Fold in oats and dates into the mixture last. Once everything is blended together, cover the dough and leave in refrigerator for one hour minimum.

3.) Preheat oven to 375oF. Grease two cookie sheets. Form dough into 1-inch balls and place 2 inches apart on cookie sheets. Lightly flatten each ball of dough with a spoon or spatula.

4.) Bake cookies in oven for 8-10 minutes, or until cookies turn golden-brown. Once cookies are done baking, let sit on cookie sheet for about 5 minutes before transferring to a cooling rack. Enjoy!
