2 cups old fashioned oats
2 cups SOL Unsweetened Sunflower Beverage
3/4 cup natural maple syrup
1 Tablespoon cinnamon
1 teaspoon baking powder
1 large egg
1 Tablespoon vanilla extract
1 banana, peeled and sliced
1 cup strawberries, sliced
1 cup walnuts, chopped
1/3 cup semi-sweet chocolate chips (optional)
Preheat oven to 350 degrees.
In a large mixing bowl, combine the oats, syrup, cinnamon, baking powder, half of the strawberries, walnuts and chocolate chips. Mix well.
In a separate bowl combine the SOL Sunflower Beverage, eggs and vanilla. Stir until completely combined.
Spray a 13x9in pan with cooking spray. Spread the oatmeal mixture out evenly in the pan. Then pour the egg mixture on top. Shake the pan a little until everything settles evenly into the pan. Top with the remaining strawberries and bananas. Bake for 35-40 minutes.
