Recipe: Oatmeal Applesauce Pancakes

Are you looking for a new pancake recipe to try out this weekend? Generally weekend morning are a little less hectic than they are during the week, hopefully that means you have some extra time to sit down and enjoy breakfast. This is a great recipe that your whole family will enjoy. It is made with healthy, satisfying ingredients to help power you through your day. There are a few healthy swap outs including using unsweetened applesauce and SOL Vanilla Sunflower Beverage. Just because they are healthy doesn’t mean they don’t taste delicious!


1 cup all-purpose flour

1 cup old fashioned oats

1 ½ tsp baking powder

1 tsp baking soda

½ tsp salt

1 tsp cinnamon

¼ cup brown sugar

1 cup unsweetened applesauce

1 cup SOL Vanilla Sunflower Beverage

2 egg whites

1 Tbsp coconut oil


In a large bowl sift together the flour, oats, baking powder, baking soda, salt, cinnamon and brown sugar.

In a separate bowl, whisk together SOL, applesauce, egg whites and oil.

Slowly fold the liquid ingredients into the dry ingredients. Gently whisk but do not over-blend.

Preheat a slightly oiled griddle or frying pan over medium-high heat.

Pour batter (1/4 cup at a time) onto the griddle or frying pan.

Cook until bubbles form and it is lightly browned on the underside, flip and brown the other side.

*Be sure to lightly oil the griddle or frying pan in between each pancake.
