Recipe: Vanilla Chia Seed Pudding

When you think about chia seeds you probably recall those fuzzy green Chia Pets you had growing up. But, these tiny superfood seeds are actually packed with nutrition and are becoming an increasingly popular food to add to your diet. Chia seeds are packed with Fiber, Omega 3’s, Calcium, Phosphorus and Protein. The positive health effects include boosting energy, stabilizing blood sugar, aiding digestion, and lowering cholesterol. This Vanilla Chia Seed Pudding recipe combines chia seeds and SOL Vanilla Sunflower Beverage, it is easy to make and you can customize the toppings any way you want. Make a large batch and you have an easy grab and go breakfast all week long!

INGREDIENTS: makes 4 servings

2 cups SOL Vanilla Sunflower Beverage

1/3 cup chia seeds

1 Tbls. maple syrup or honey

1/2 tsp. vanilla extract

DIRECTIONS:

In a bowl combine SOL Vanilla Sunflower Beverage, chia seeds, maple syrup/honey and vanilla extract.

Cover the mixture and refrigerate overnight.

Serve with your favorite toppings (berries, bananas, coconut, almonds etc…).
