Recipe: Lightened-Up Mac & Cheese

Do you love mac & cheese but hate how it’s loaded with calories and fat and usually lacking nutrients? If so, you have to give this recipe a try. It helps fulfill the craving for mac & cheese without derailing your diet. It includes healthy ingredients such as whole wheat pasta, kale and red peppers. By replacing whole milk and butter with SOL Sunflower Beverage you keep the creamy texture without the extra calories. Give it a try, it might become your new favorite mac & cheese recipe!   

Ingredients:

8oz whole wheat elbow macaroni

1 small onion, chopped

10oz kale, torn into pieces

1 tablespoon minced garlic

3 cups SOL Unsweetened Sunflower Beverage

1 red bell pepper, finely chopped

1/2 teaspoon salt

1/2 teaspoon pepper

2 tablespoons flour

3 tablespoons olive oil

3 cups grated sharp cheddar cheese

Directions:

Preheat oven to 375 degrees.

Cook macaroni until al dente, about 5 minutes. Drain and pour into an 8x8in baking dish.

In a sauté pan cook the onion, kale, garlic and red pepper in 1 tablespoon olive oil over medium heat until soft.

In a medium sauce pan, mix the flour and 2 tablespoons of olive oil, cook over medium heat stirring frequently. Slowly whisk in SOL Sunflower Beverage and cheese. Add kale mixture and salt and pepper, stir until combined. Pour the mixture over the noodles. Bake for 20 minutes remove from the oven and let stand 5 minutes before serving.
