Summer is in full swing, the warmer weather and sunshine are a perfect excuse to enjoy a bowl of soft serve. This homemade Chocolate Banana Soft Serve makes for a delicious, healthy treat on a hot summer day. It only requires a few ingredients and can be made in no time at all. Just make sure you keep plenty of frozen bananas on hand. This recipe is made with SOL Sunflower Beverage and is dairy and gluten free so it’s perfect for anyone with allergies. Although nothing compares to the real stuff, this recipe will definitely satisfy your ice cream craving!
2 frozen bananas (cut into chunks before freezing)
2 tablespoons cocoa powder
3 tablespoons unsweetened SOL Sunflower Beverage
2 tablespoons unsweetened shredded coconut
2 tablespoons sunflower seeds
Place bananas, cocoa powder and half of the SOL Sunflower Beverage into the blender. Blend on low speed for 30 seconds and then increase speed and continue blending adding more SOL if necessary. The mixture will start to separate into four lumps. Once this happens it is ready to eat! Scoop into bowls and serve with shredded coconut and sunflower seeds.
