Recipe: Vanilla SOL Chia Seed Pudding

It’s true, this yummy snack comes from the very same plant as the infamous Ch-Ch-Ch-Chia Pet. Chia seeds are a great source of both Omega-3 Fatty Acids and fiber, and they aid in digestion. They are also loaded with calcium, magnesium, and phosphorus. Unlike flax seeds, chia seeds can be eaten ground and whole. In a one ounce serving of chia seeds you get-

  • 11 grams of fiber
  • 18% of your daily calcium
  • 27% of your daily phosphorus
  • 4.4 grams of protein
  • 5 grams of Omega-3 Fatty Acids

When you let chia seeds soak in liquid for about 30 minutes, they expand to 3 times their size and become gel-like (great for regularity!).… Read More
